Spooky Sugar Cookies

Who says sugar cookies are just for Christmas? These spooky sugar cookies are great for Halloween parties (or a Krampus holiday party). I use a vegan recipe so all my friends can enjoy, but you can easily swap the vegan ingredients for regular milk and butter for a standard recipe. Bring out your favorite Halloween-shaped cookie cutters and have fun decorating!

The Cookies

Vegan Sugar Cookies

Ingredients
  

  • ½ cup vegan butter
  • ½ cup granulated sugar
  • ¼ cup dark brown sugar
  • 1 tsp vanilla extract
  • ½ tsp almon extract (optional)
  • ½ tsp baking soda
  • 1 tbsp hot water
  • 1 ¾ cup flour
  • 1 tbsp cornstarch
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 tbsp almond or soy milk (divided)

Method
 

  1. Preheat oven to 350 F
  2. Line a baking sheet with parchment paper or baking mat
  3. In a large bowl, beat together butter, sugar, and brown sugar until well blended (using a stand mixer works best)
  4. Combine the baking soda and 1 tbsp hot water in a small bowl. Stir until the baking soda is dissolved
  5. Add the baking soda mix into the butter and sugar mixture. Add the vanilla and (optional) almond extract. Continue to mix until well blended
  6. In a separate large bowl, whisk together the flour, baking powder, cornstarch, and salt until well blended
  7. Gradually add the flour mixture to the butter and sugar mixture
  8. Add the milk 1 tbsp at a time until the dough comes together. Form into a silky smooth ball
  9. Place the dough on a lightly floured surface, using additional flour as needed to avoid sticking. Lightly flour the top of the dough
  10. Roll out the dough to ¼-inch thickness. Use parchment paper between the rolling pin and dough to prevent sticking
  11. Using your favorite Halloween cookie-cutters, cut out the cookies
  12. Place cookies 1 inch apart on the lined baking sheet
  13. Bake for 10 - 15 minutes
  14. Allow cookies to completely cool on a wire rack before adding frosting

The Frosting

Cookie Dough Buttercream Frosting

Ingredients
  

  • ½ cup vegan butter (softened)
  • ¼ tsp salt
  • ¼ cup brown sugar
  • 1 ¼ cup powdered sugar
  • ⅓  cup flour
  • 1 tbsp almond or soy milk
  • ½  tbsp vanilla
  • food coloring (various colors)

Method
 

  1. Combine butter, salt, and brown sugar
  2. Add powdered sugar. Stir thoroughly
  3. Add flour. Stir thoroughly
  4. Add milk and vanilla. Stir thoroughly
  5. Divide the mixture into multiple bowls (one for each color you plan to use)
  6. Add drops of food coloring to turn each portion into the desired color
  7. Pipe the frosting onto cooled cookies
  8. Allow the cookies to dry for a few hours. Do not stack them on top of one another until the frosting sets
