Pumpkin Seed Recipes

Each year I have a couple tried and true pumpkin seed recipes to utilize the leftovers from my jack-o-lanterns. While there are many variations and fancy recipes out there on the internet, these are my favorite simple methods to create tasty treats.

Salty Pumpkin Seeds

You can’t get more classic and easy than this salty pumpkin seeds recipe:

  1. Pre-heat your oven to 300°F.
  2.  Rinse your pumpkin seeds to remove any pumpkin pieces. Pat dry with a paper towel.
  3. In a bowl, coat 2 cups seeds with 2 tablespoons canola oil. Stir until all seeds are evenly coated.
  4. Add 1 teaspoon salt (or more for taste). Mix thoroughly to make sure the salt reaches all the seeds.
  5. Spread the seeds out in a single layer on a baking sheet.
  6. Bake for approximately 30 minutes, stirring occasionally, until crisp, dry, and golden brown.

Brown Sugar Pumpkin Seeds Recipe

I usually like to divide up my pumpkin seeds to make one classic batch and one brown sugar batch. They can be cooked concurrently. Afterwards, mix the two for a perfect salty & sweet combo!

Here is the brown sugar pumpkin seeds recipe:

  4. Add 2 tablespoons dark brown sugar and 1 teaspoon cinnamon (for more pumpkin pie flavor, you can substitute pumpkin pie spice for the cinnamon). Mix thoroughly to coat all seeds with the sugar & spice.
  5. Spread the seeds out in a single layer on a baking sheet.
  6. Bake for approximately 30 minutes, stirring occasionally, until crisp, dry, and golden brown.
